- chickpeas, 1 can (drained)
- cannellini beans, 1 can (drained)
- red/orange/yellow bellpepper, 2-3 (diced)
- cucumber, 1 (diced)
- red onion, 1 (finely chopped)
- kalamata olives, 1 glass
- feta cheese, 200g (crumbled)
- for the dressing
- wine vinegar, 1/4 cup
- maple syrup (or honey), 2 tsp
- oregano, 2 tsp
- garlic, 3 cloves (minced)
- salt, 1 tsp
- pepper
- olive oil, 1/4 cup
Instructions
- Combine dressing, whisking until well combined
- Combine salad
- Pour dressing over salad and combine
- Chill in fridge for 30 min
